These crispy mini chicken tacos are a fun and delicious twist on traditional tacos, perfect for sharing with friends and family. They’re packed with flavor, featuring taco-seasoned chicken and melty colby jack cheese, all tucked into mini corn tortillas that crisp up wonderfully in the oven.
Ingredients
1 lb. cooked shredded seasoned chicken breast
8 oz. shredded colby jack cheese
20–24 street taco corn tortillas
Olive oil or cooking spray
Instructions
Preheat oven to 425 degrees Fahrenheit.
Arrange tortillas on a baking sheet and lightly brush or spray with olive oil.
Place a heaping tablespoon of chicken on each tortilla, then top with a similar amount of cheese.
Bake for 2 minutes, or until the cheese begins to melt.
Remove from the oven, fold tortillas in half to form tacos, pressing gently.
Return to the oven and bake for another 12-15 minutes until crispy.
Serve with sour cream, salsa, and fresh chopped cilantro.
