These Crispy Parmesan Cauliflower Steaks are the perfect blend of crispy, cheesy goodness paired with a refreshing avocado dip. The cauliflower steaks are roasted to perfection with a golden Parmesan crust, giving each bite a satisfying crunch. The paprika and chili pepper flakes add a subtle kick, while the garlic and Parmesan bring a rich, savory flavor to the dish.

For the Cauliflower Steaks:
1 cauliflower head
¼ cup olive oil
2 tablespoons grated Parmesan cheese
2 cloves garlic, minced
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon chili pepper flakes
½ cup freshly grated Parmesan cheese (for coating)
Optional garnish: fresh chives, chopped
For the Avocado Dip:
1 avocado, halved
2 scallions, roughly chopped
½ lime, juiced
1 jalapeño, deseeded and roughly chopped
1 tablespoon olive oil
1 tablespoon grated Parmesan (or nutritional yeast)
¼ cup parsley
⅓ cup water
Salt and pepper to taste


Instructions

Prepare the cauliflower steaks:
Preheat your oven to 450°F (230°C).
Dry the cauliflower well and cut it in half, then slice each half to create your steaks.
Transfer the cauliflower steaks to a baking sheet.
Season the steaks:
In a small bowl, whisk together the olive oil, 2 tablespoons grated Parmesan, minced garlic, paprika, onion powder, salt, and chili pepper flakes.
Brush the cauliflower steaks on all sides with this mixture.
Dip one side of each steak into the freshly grated Parmesan and place the Parmesan-coated side down on the baking sheet.
Bake the cauliflower:
Bake at 450°F for 10 minutes. Then, reduce the oven temperature to 425°F and bake for an additional 20-25 minutes, depending on the thickness of the steaks.
Once done, remove from the oven and serve crispy side up. Garnish with freshly chopped chives.
Make the avocado dip:
While the cauliflower is baking, prepare the avocado dip by adding the avocado, scallions, lime juice, jalapeño, olive oil, Parmesan (or nutritional yeast), parsley, water, salt, and pepper into a mini food processor.
Blend until smooth. Taste and adjust seasoning as needed.
