  • 4 medium (550g / 1.2lb) potatoes
  • 1 small (90g) yellow onion
  • 3 tablespoons all-purpose flour
  • ½ teaspoon salt
  • ¾ teaspoon white pepper
  • ½ teaspoon smoked paprika
  • 1 medium egg
  • ¼ cup (60ml) cooking oil for frying
  • 23 tablespoons chives, chopped, for garnish

Instructions

  1. Prepare the Potatoes and Onion Start by washing and peeling the potatoes. Grate them on the small side of a grater or use a food processor. Transfer the grated potatoes into a kitchen towel and squeeze out as much water as possible. Let the liquid sit for 5 minutes then discard the water, keeping the starch settled at the bottom. Next, grate the onion on the large side of the grater, and similarly, squeeze out excess water using the kitchen towel.
  2. Form the Batter In a medium-sized bowl, combine grated potatoes and onions. Mix in flour, salt, white pepper, smoked paprika, and the egg. Add about 2 tablespoons of the reserved potato starch to the mixture to help bind the batter.
  3. Fry the Fritters Heat the cooking oil in a pan over medium-high heat. Spoon ¼ cup of the batter per fritter into the pan, lightly pressing down to flatten. Cook each fritter for 3-4 minutes on each side until golden brown and crispy. Work in batches to ensure they don’t become soggy.
  4. Serve Transfer cooked fritters to a wire rack to drain any excess oil. Sprinkle with sea salt and keep warm in an oven if necessary. Serve the fritters hot, topped with a dollop of sour cream and sprinkled with chopped chives.
