  • 4 large russet potatoes
  • 1 medium onion
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon sea salt, or to taste
  • 1 teaspoon pepper, or to taste
  • 2 tablespoons vegetable oil for frying

Instructions

  1. Prep the veggies Start by peeling the potatoes and then cutting them into cubes. Similarly, chop the onion finely. To make this step quicker, a food processor can be used, or alternatively, you can grate them using a box grater for finer pieces.
  2. Strain and squeeze Place the potato and onion mixture in a fine strainer or wrap in a kitchen towel. Squeeze out as much liquid as possible into a bowl. After the liquid is drained, a layer of white potato starch will settle at the bottom of the bowl. Keep this starch and discard the liquid.
  3. Mix it all up Transfer the squeezed potato and onion mixture back into the bowl with the retained starch. Add the eggs, flour, salt, and pepper. Stir everything together until the mixture is well combined and cohesive.
  4. Fry them up Heat the vegetable oil in a large non-stick skillet over medium heat. Spoon portions of the potato mixture into the skillet and flatten them slightly to form the fritters. Cook each side for 2-3 minutes, or until they become crispy and turn a golden brown color.
