Ingredients
1.5 lbs beef sirloin steak, thinly sliced
1 onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
3 cups diced potatoes
1 cup shredded cheddar cheese
1 cup beef broth
2 tablespoons Worcestershire sauce
2 cloves garlic, minced
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
In a large crockpot, layer half of the sliced onions, green bell pepper, red bell pepper, and diced potatoes.
Place the thinly sliced beef sirloin steak on top of the vegetables in an even layer.
Sprinkle minced garlic, paprika, salt, and pepper over the steak.
Add the remaining sliced onions, green bell pepper, red bell pepper, and diced potatoes on top of the steak.
In a mixing bowl, whisk together beef broth and Worcestershire sauce. Pour this mixture evenly over the ingredients in the crockpot.
Cover the crockpot with the lid and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the potatoes are tender and the beef is cooked through.
About 30 minutes before serving, sprinkle shredded cheddar cheese over the top of the casserole. Cover and let it melt.
Once the cheese is melted and bubbly, garnish the casserole with chopped fresh parsley.
