- 18 oz all-purpose flour, or just over 4 cups
- ¼ cup + 1 Tbsp granulated sugar
- 2½ tsp fine sea salt or table salt
- 1 Tbsp + 1/2 tsp instant yeast
- ½ cup + 2 Tbsp cold water
- ½ cup + 2 Tbsp cold whole milk
- 3 Tbsp unsalted butter, softened, use European-style butter
- 1¼ cups cold, unsalted butter, use European-style butter only
- 1 large egg
- 1 egg yolk
- Pinch of salt
Instructions
- Make the Dough: In the bowl of a stand mixer, combine flour, sugar, salt, and yeast, and whisk them together. Add the water, milk, and softened butter. Using the dough hook attachment, mix at speed 2 for 3-4 minutes, until a smooth ball forms. Let it rise in a warm place until nearly doubled, about 1½ to 2 hours. Then, refrigerate the dough after shaping it into a square on a plastic-wrapped board.
- Pound the Butter: Cut the butter into ½-inch slabs to form a square, sandwich between parchment paper, and pound to even thickness. Chill thoroughly.
- Encase the Butter: Place the butter diamond-style over the dough, fold it to encase the butter completely, and seal the edges.
- First Turn: Roll the dough into a long rectangle, fold it into thirds, and chill again. This process is repeated for a total of three turns.
- Roll the Dough for Croissants: Roll out to a long narrow strip and cut into triangles. Roll each triangle starting from the base to form croissants.
- Prep Time: Around 4 hours, including rising and chilling
