500 g / 1lb mushrooms, cleaned
1 cup flour
3 eggs, beaten
2 cups panko breadcrumbs
1 tsp garlic powder
1 tsp dried oregano
Salt and black pepper
2 tbsp olive oil
For the sour cream dipping sauce:
1 cup sour cream
2 tbsp chopped chives
1 tsp lemon juice
½ tsp garlic powder
Salt and black pepper to taste


Instructions

Season the flour with a pinch of salt and pepper and place in a shallow bowl.
Place beaten eggs into a second shallow bowl.
In a third bowl, combine the panko breadcrumbs with garlic powder and oregano, season with salt and pepper.
Coat the mushrooms first in seasoned flour, then dip in beaten egg, and finally coat in breadcrumbs.
Arrange the crumbed mushrooms in a single layer in the air fryer, then drizzle with olive oil.
Cook at 200ºC/390ºF for 10 minutes, then turn over and cook for another 3-5 minutes until crisp and golden.
For the dipping sauce, mix sour cream, chopped chives, garlic powder, and lemon juice. Season with salt and pepper.
Serve the mushrooms with the dipping sauce.
