Cookies:
½ cup butter, softened
⅓ cup brown sugar
¼ cup granulated sugar
1 tablespoon vanilla extract
1 egg, at room temperature
1¼ cup old-fashioned rolled oats
1 cup all-purpose flour
¼ teaspoon cinnamon
Pinch of nutmeg
½ teaspoon baking soda
¼ teaspoon salt
Icing:
¾ cup powdered sugar
1.5 tablespoon milk
¼ teaspoon vanilla extract


Instructions

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until well combined. Add the egg and vanilla extract, and mix until the mixture is light and fluffy.
Add the flour, oats, cinnamon, nutmeg, baking soda, and salt to the wet ingredients. Mix until just combined, making sure to scrape down the sides of the bowl.
Using a large cookie scoop, divide the dough into 8 equal-sized balls. Place them on the prepared baking sheet and gently press each ball down to about 1 inch in thickness.
Bake the cookies in the preheated oven for 10 minutes, being careful not to overbake them to ensure they remain soft and gooey.
Allow the cookies to cool on the baking sheet for 20 minutes before transferring them to a cooling rack to cool completely.
