Cube Steak Mushroom Casserole

Ingredients

1 pound cube steak, diced
2 cups long-grain white rice, uncooked
2 cans French onion soup (10.5 ounces each)
2 cans beef consomme (10.5 ounces each)
8 ounces fresh sliced mushrooms (or canned)
½ cup unsalted butter (1 stick), sliced into pats
Green onions or chives, chopped for garnish


Instructions

Preheat the oven to 425°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
In the prepared dish, combine diced cube steak, uncooked rice, French onion soup, beef consomme, and mushrooms. Stir well.
Distribute pats of butter evenly over the rice mixture.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 30 minutes, or until the rice is tender.
Fluff the rice with a fork and garnish with chopped chives or green onion before serving.
