1 medium English cucumber
78 medium red radishes
1 shallot, peeled
2 cloves of garlic, peeled and minced
2 tablespoons chopped fresh dill
1 tablespoon fresh lemon zest (optional for garnish)
For the Lemon Vinaigrette:

¼ cup citrus vinegar (or apple cider vinegar)
¼ cup extra virgin olive oil
1 tablespoon fresh lemon juice
1 tablespoon maple syrup
1 teaspoon dijon mustard
Salt and pepper, to taste


Instructions

Prepare the vegetables: Rinse and dry the radishes and cucumbers. Use a mandolin slicer or sharp knife to thinly slice them. Thinly slice the shallot and chop the garlic. Add everything to a medium-large bowl along with the chopped dill.
Mix up the dressing: In a small bowl, whisk together all dressing ingredients until well combined and emulsified.
