For the chocolate cake:

8 ounces bittersweet chocolate, chopped
1 cup butter
1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1 cup granulated sugar
1 cup brown sugar
¾ cup unsweetened cocoa powder
3 eggs, room temperature
⅓ cup whole milk
1 teaspoon instant coffee + ½ cup water
For the chocolate frosting:

8 ounces bittersweet chocolate, chopped
1 ½ cups heavy cream
2 tablespoons brown sugar
Garnish:

Chocolate curls, optional


Instructions

To make the cake:

Preheat oven to 350°F. Lightly grease and flour two round 8-inch cake pans, set aside.
In a small saucepan, melt butter and chocolate over low heat, stirring almost constantly until both are completely melted. Add mixture of instant coffee and water and stir.
Remove from heat.
In a large bowl with an electric mixer, combine flour, granulated sugar, brown sugar, cocoa powder, baking powder, and baking soda. Mix on low until dry ingredients are thoroughly combined.
Add eggs and milk and beat on medium speed for about 2 minutes, then add the melted chocolate mixture and mix until combined.
Pour batter evenly into prepared pans.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow for about 10 minutes, then remove from the pan and cool completely.
