Recipe: Dill Pickle Popcorn

Ingredients:

Dill Seasoning:

  • 2 teaspoons dried dill weed
  • 1 teaspoon garlic powder
  • 1 teaspoon fine sea salt (adjust to taste)
  • Freshly ground black pepper (to taste)

Popcorn:

  • 3 tablespoons oil of choice (refined coconut oil is preferred)
  • ½ cup popcorn kernels
  • 3 tablespoons unsalted butter
  • 2 teaspoons dill pickle juice

Directions:

  1. Prepare the Dill Seasoning:
In a small bowl, mix together the dried dill weed, garlic powder, sea salt, and freshly ground black pepper. Set this aside; you’ll sprinkle it over the popcorn later.
  2. Make the Popcorn:
In a large stockpot, add the oil over high heat, dropping in three “test” kernels to gauge readiness. Once these kernels pop, add the remaining ½ cup of popcorn kernels. Cover the pot and immediately remove it from the heat, swirling gently for about 20 seconds.
  3. Pop and Vent:
Return the pot to high heat and allow the popcorn to pop. Once popping slows down significantly, crack the lid slightly to allow steam to escape. This ensures the popcorn stays crispy. Keep heating until popping stops.
  4. Prepare the Butter Mixture:
In a microwave or on the stovetop, melt the butter. Stir in the dill pickle juice until well combined.
  5. Season the Popcorn:
Transfer the freshly popped popcorn to a large bowl. Drizzle it with the melted butter and dill pickle juice mixture, tossing well to ensure all kernels are coated. Sprinkle with the dill seasoning and toss again until evenly distributed. Adjust salt to taste.

This Dill Pickle Popcorn is best served immediately while still warm and fresh. It’s a versatile snack that pairs well with a cozy movie night, a family gathering, or any casual get-together.
