4 large boneless skinless chicken breasts
2 cups flour
4 tsp salt
4 tsp black pepper
3 tbsp ground ginger
1 tbsp freshly ground nutmeg
2 tsp ground thyme
2 tsp ground sage
1 tsp cayenne pepper
2 tbsp paprika
4 eggs
8 tbsp water
2 tbsp olive oil
34 cloves minced garlic
1 cup honey
1/4 cup soy sauce (low sodium preferred)
1 tsp ground black pepper
Canola oil for frying


Instructions

Flatten chicken to 1/2 inch thickness using a meat mallet between two sheets of plastic wrap. Alternatively, slice horizontally to create thinner cuts.
Combine flour, salt, pepper, ginger, nutmeg, thyme, sage, paprika, and cayenne. Divide into two portions, using one and saving the other.
Create an egg wash by whisking eggs and water.
Season chicken with salt and pepper, dredge in flour mixture, dip in egg wash, and coat again in flour mixture.
Heat skillet with canola oil over medium-low heat (about 4.5 setting). Fry chicken 4-5 minutes per side until golden and crispy.
Drain chicken on a wire rack before tossing in honey garlic sauce. Serve with noodles or rice.
Honey Garlic Sauce:
Heat olive oil and garlic in a saucepan until garlic is softened. Do not brown.
Add honey, soy sauce, and black pepper. Simmer for 5-10 minutes, watching for foaming.
Remove from heat and let cool slightly before using.
