  • 4 green onions, keeping white and green parts separate
  • 1 Tbsp. sesame oil
  • 8 cups chicken bone broth
  • 24 oz. dumplings
  • 6 cups baby spinach
  • Soy sauce, toasted sesame oil, and chili oil for serving

Instructions

  1. Prepare the Aromatic Base: Heat 1 Tbsp. of sesame oil in a large soup pot or Dutch oven. Once hot, add minced ginger and the white parts of the green onions. Sauté briefly until they are fragrant, about 1 minute, making sure to stir continuously to prevent burning.
  2. Add the Broth: Pour the chicken bone broth into the pot. Increase the heat to high and bring to a boil. To hasten the boiling process, cover the pot.
  3. Cook the Dumplings: Add the dumplings to the boiling broth and cook them for 2 minutes, or follow the cooking time specified on the dumpling package. Stir occasionally to prevent them from sticking to the bottom of the pot.
  4. Incorporate the Spinach: Add fresh baby spinach to the pot and stir well. Cook until the spinach is just wilted, which typically takes between 1-2 minutes, maintaining a vibrant green color and tender texture.
  5. Garnish and Serve: Remove the pot from heat. Garnish the soup with a drizzle of toasted sesame oil, a few drops of chili oil for some heat, and sprinkle sliced green onion parts. Serve hot with soy sauce on the side for added seasoning.
