The addition of vanilla brings a deep, fragrant sweetness that enhances the overall flavor.

1 cup sugar
1 cup heavy cream
1/2 cup salted butter
1 teaspoon vanilla extract (or vanilla bean paste)
1/4 teaspoon baking soda


Instructions

Combine Ingredients: In a heavy-bottom saucepan, add the sugar, heavy cream, butter, and vanilla extract. Stir together using a wooden spoon.
Heat the Mixture: Bring the mixture to a low boil over medium heat, stirring constantly to prevent burning.
Simmer and Thicken: Once it reaches a low boil, reduce the heat to a simmer. Continue stirring for 5-10 minutes until the syrup thickens and coats the back of a spoon.
Add Baking Soda: Right before removing the syrup from the heat, stir in the baking soda until fully dissolved. The mixture will foam slightly—this is normal.
Serve: The syrup is ready to serve immediately over pancakes, waffles, or French toast. You can also allow it to cool and store it in the refrigerator for later use.
