This Easy Baked Shrimp Toast is a delightful combination of crispy bread, succulent shrimp, and aromatic garlic. The shrimp mixture is rich and flavorful, thanks to the blend of mayonnaise, butter, and fresh scallions, all baked to golden perfection on a crunchy baguette or ciabatta base. 6 oz shrimp, peeled and deveined (use raw shrimp)
3 tablespoons mayonnaise
3 tablespoons butter, melted
1 1/2 teaspoons grated garlic
1 1/2 tablespoons thinly sliced scallions (about 2 stalks of scallions)
Black pepper, to taste
Baguette or ciabatta (see notes)
Fresh basil, thinly sliced for garnish


Instructions

Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare
Finely chop the shrimp or pulse them in a food chopper into small pieces. Be careful not to process them into a paste.
In a mixing bowl, combine the chopped shrimp with mayonnaise, melted butter, grated garlic, sliced scallions, and a generous amount of black pepper. Mix well until fully combined.
Prepare the Bread:
Slice the ciabatta or baguette in half horizontally. If using a baguette, you can also cut it into thin slices, no thicker than 1 inch.
Assemble and Bake:
Spread the shrimp mixture evenly on the cut side of the bread.
Place the prepared bread on a baking sheet and bake in the preheated oven for 15-18 minutes, or until the top is golden brown and the bread is crispy.
Garnish and Serve:
Once baked, remove the shrimp toast from the oven and sprinkle with freshly sliced basil.
Serve immediately while hot and crispy.
