Beef and Marinade:
200 g Beef steak (flank, sirloin, rib-eye, etc.)
2 tsp Light soy sauce
2 tsp Corn starch
2 tsp Cooking oil (vegetable, sunflower, canola)
Noodles and Vegetables:
100120 g Dried rice noodles (10mm wide)
34 stalks Choy sum (or substitute with Chinese broccoli or bok choy)
2 Eggs
Salt to taste
34 cloves Garlic, minced
Pad See Ew Sauce:
3 tbsp Oyster sauce
1 tbsp Light soy sauce
1 tbsp Dark soy sauce
1 tbsp Fish sauce
1 tsp Sugar


Instructions

Soak the dried rice noodles in hot water for 15 minutes, then drain and rinse with cold water.
Thinly slice the beef against the grain and marinate with light soy sauce, corn starch, and cooking oil for 10-15 minutes.
Prepare the vegetables. Mix the sauce ingredients in a small bowl until the sugar dissolves.
Heat a large wok or pan over medium-high heat. Add 1 tbsp of oil, fry the eggs until scrambled, then set aside.
In the same wok, add 3 tbsp of oil and sear the marinated beef for 2-3 minutes on one side, then flip and continue to cook for 1-2 minutes.
Add garlic and choy sum stems, stirring until fragrant. Follow with choy sum leaves.
Add noodles and sauce mixture. Increase heat and stir fry until the sauce is absorbed and noodles are glossy.
Return the scrambled eggs to the wok, toss everything together, and serve.
