4 beets, boiled until tender and cubed
4 tablespoons olive oil
½ red onion, thinly sliced
2 tablespoons chives, chopped
½ teaspoon coarse salt
¼ teaspoon black pepper
Toppings:
½ cup walnuts, halved
1 cup feta, crumbled
Instructions
Combine all the salad ingredients in a bowl.
Place the salad on a large plate, top it with the walnuts and feta crumbs and serve.
