This dish combines tender chicken strips, vibrant mixed vegetables, and fluffy rice seasoned with a hint of soy and sesame oil, making it a delightful and fulfilling meal perfect for any day of the week.
Ingredients
4 cups cooked rice
3/4 lbs chicken breast (approximately 1 large piece)
1/4 tsp salt
Vegetable or canola oil
2 eggs
1/2 cup diced white or yellow onion
4–6 cloves garlic, minced
1 cube chicken bouillon
2 tsp soy sauce
1 tsp sesame oil (optional)
1/2 tsp black pepper
2 cups frozen mixed vegetables
2 tbsp sliced green onions
Instructions
Slice chicken into thin strips. Sprinkle with salt and rub evenly. Set aside.
Beat eggs in a bowl. Heat a skillet over medium heat, add some oil, then cook the eggs until set. Remove and chop into small pieces.
In the same skillet, increase to high heat, add more oil, and cook chicken until done. Remove and set aside.
Add more oil if needed, then sauté onions and garlic until fragrant. Add rice, breaking up clumps.
Stir in chicken bouillon, soy sauce, sesame oil, and black pepper. Cook for about a minute.
Add frozen vegetables, cook for 1-2 minutes.
Return chicken and eggs to skillet, mix well.
Garnish with green onions and serve.
