Breading Mixture:

½ cup parmesan cheese
¼ teaspoon pepper

1.5 lbs chicken breasts (about 3 large chicken breasts) OR 1.5 lbs chicken cutlets
½ cup whole wheat flour
3 large eggs
1.5 cups shredded mozzarella cheese
1.5 cups marinara sauce
Breading Mixture:

1 cup whole wheat bread crumbs, unseasoned
½ cup parmesan cheese
¼ teaspoon pepper
2 teaspoons dried basil
2 teaspoons dried parsley

2 teaspoons dried basil
2 teaspoons dried parsley

Instructions

Begin by butterflying the chicken breasts: slice them in half lengthwise (like opening a book). Place them between sheets of plastic wrap and pound with a meat tenderizer until they’re about ¼ inch thick. This ensures even cooking and tender chicken. You should have 6 cutlets.
Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
Prepare 3 large shallow bowls for the breading process: fill the first bowl with whole wheat flour, the second with whisked eggs, and the third with a mix of bread crumbs, parmesan cheese, pepper, dried basil, and dried parsley.
Create an assembly line with your bowls. Coat each chicken cutlet in flour, dip in egg, then dredge in the bread crumb mixture, pressing gently to ensure full coverage. Repeat this process for all cutlets.
Place the breaded cutlets on the prepared baking sheet. Bake at 425°F for 15 minutes, then flip the cutlets and bake for another 15 minutes.
After 30 minutes of baking, top each cutlet with about ¼ cup of marinara sauce and ¼ cup of shredded mozzarella. Return to the oven and broil for 2 minutes, or until the cheese is melted and bubbly.
Serve your crispy Chicken Parmesan over pasta or a fresh salad for a complete meal.
