This Easy Creamy Lasagna Soup brings all the classic flavors of lasagna into a comforting bowl. The soup features hearty ground beef, tender lasagna noodles, and a rich tomato broth enhanced with Italian herbs and spices. Adding heavy cream gives it a luscious texture, making each spoonful taste like creamy lasagna in soup form.
Ingredients
For the Soup:
1 tablespoon olive oil
1 medium onion, finely diced
1 pound ground beef (80/20)
5 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 teaspoon dried oregano
2 tablespoons tomato paste
25 ounces tomato basil pasta sauce
28 ounces diced canned tomatoes
4 cups chicken broth (add more if you prefer a thinner soup)
2 teaspoons kosher salt, divided (or to taste)
12 lasagna noodles, uncooked and broken into 2-inch pieces
1/2 cup heavy cream (optional)
For Garnishes:
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese, freshly grated
1/2 cup ricotta cheese
6 tablespoons fresh basil, finely chopped
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until softened.
Add the ground beef to the pot and cook until browned. Stir in the minced garlic, red pepper flakes, 1 teaspoon of kosher salt, oregano, and tomato paste, combining well.
Pour in the tomato basil pasta sauce, diced canned tomatoes, and chicken broth. Stir to combine, then bring the mixture to a boil.
Add the broken lasagna noodles to the pot and the remaining 1 teaspoon of kosher salt (adjust to taste). Reduce the heat and let it simmer until the noodles are tender.
Stir in the heavy cream for a richer, creamier soup. Add an extra 1-2 cups of chicken broth if you prefer a thinner consistency.
For an extra creamy touch, stir in some shredded mozzarella or parmesan directly into the soup.
Ladle the lasagna soup into bowls and garnish with ricotta cheese, shredded mozzarella, parmesan, and fresh basil on top. Serve hot and enjoy the comforting flavors of lasagna in soup form!
