Ingredients

240 g high-quality dark chocolate (specifically 100 g Jivara milk chocolate and 140 g Caraïbe dark chocolate from Valrhona)
750 ml whole milk (or a mix of 200 ml cream and 550 ml milk)
30 g powdered milk
80 g sugar


Instructions

Combine all ingredients in a saucepan and heat while stirring regularly.
Allow the mixture to boil for about 5 minutes on low heat.
Cool the mixture in the refrigerator for at least 5 hours, ideally overnight.
Churn the mixture in your ice cream maker until the ice cream sets, then freeze for at least two hours.
If you don’t have an ice cream maker, blend the mixture with an immersion blender every hour to break up the ice crystals until the ice cream is firm and ready to serve.
