1 cup gluten-free all-purpose flour
1/2 teaspoon xanthan gum (omit if your gluten-free flour blend already includes it)
1/2 cup tapioca starch, plus more as needed
2 teaspoons baking powder
1 teaspoon salt
1 egg
1/4 cup warm water, plus more as needed
1 tablespoon extra virgin olive oil, plus more for brushing
1/4 cup fresh minced garlic, optional
1/4 cup fresh chopped parsley, optional


Instructions

Combine Dry Ingredients: In a large mixing bowl, combine gluten-free all-purpose flour, xanthan gum (if using), tapioca starch, baking powder, and salt.
Whisk Wet Ingredients: In a separate medium bowl, whisk together the egg, warm water, and olive oil until fully combined.
Mix Wet and Dry Ingredients: Gradually pour the wet mixture into the dry ingredients, stirring continuously until a soft, pliable dough forms. If the dough is too dry, add a small amount of warm water. If it’s too wet, add a bit more tapioca starch.
Shape Dough: Using gluten-free floured hands, shape the dough into a round disc.
Cut and Flatten: Cut the dough disc into 8 equal portions. Flatten each portion with your fingers or a rolling pin on a floured surface until about 1/8-inch thick.
Prepare Garlic-Parsley Mixture: If using, mix the minced garlic and chopped parsley in a small bowl. Press around 1 teaspoon of the mixture onto both sides of each flattened dough piece.
Heat Skillet: Heat a cast iron skillet over high heat and brush with olive oil.
Cook Naan: Place a piece of dough in the skillet and cook for about 40 seconds, until air bubbles form and the bottom begins to char. Brush the top with olive oil, flip, and cook for another 40 seconds. Remove from skillet and cover with a kitchen towel.
Repeat: Continue until all the naan pieces are cooked. Serve warm.
