Ingredients
2 Bunches dark leafy kale or curly kale (thinly sliced) – about 5-6 cups
1 teaspoon olive oil
Kosher salt
Black pepper
½ cup pistachios or pumpkin seeds
½ cup golden raisins or dried cranberries
½ cup shredded parmesan cheese
Zest of 1 lemon (about 1 tablespoon)
Lemon Dressing:
2 tablespoons fresh lemon juice (about the juice of 2 lemons)
¼ cup apple cider vinegar
¼ cup olive oil
1–2 tablespoons maple syrup or honey – to taste
½ teaspoon kosher salt
¼ teaspoon black pepper
Instructions
Add the thinly sliced kale to a mixing bowl, drizzle with olive oil, and season with salt and pepper. Lightly massage the kale for 1 minute.
Add pistachios or pumpkin seeds, golden raisins or dried cranberries, grated parmesan cheese, and lemon zest. Toss lightly to combine.
For the dressing: Combine lemon juice, apple cider vinegar, olive oil, maple syrup or honey, salt, and black pepper in a mason jar. Shake well or whisk in a bowl until emulsified.
Drizzle the dressing over the salad and toss to coat evenly.
Serve chilled or at room temperature.
