Made with mozzarella and cream cheese, these buns are rich and satisfying, with a slight chewiness that mimics traditional bread. The addition of almond flour keeps them low in carbs, while the baking powder ensures they rise beautifully in the oven.
Ingredients
3 cups shredded mozzarella cheese
2 ounces cream cheese
1 3/4 cups almond flour
1 tablespoon baking powder
2 large eggs
Instructions
Preheat Oven: Preheat your oven to 200°C (400°F). Line a large baking tray with parchment paper and set aside.
Melt the Cheese: In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 20-second intervals, stirring between each, until the cheese is mostly melted and smooth. Allow the mixture to cool slightly.
Prepare the Dough: Transfer the warm cheese mixture into a food processor. Add the almond flour, baking powder, and eggs. Pulse the mixture until a thick dough forms.
Knead and Shape: Lightly dust a clean kitchen surface with almond flour. Transfer the dough onto it and knead it several times with slightly wet hands until smooth. Divide the dough into 6 equal portions. Roll each portion into a ball and place them on the prepared baking tray. Gently press down on each ball to form a flatter, bun-like shape.
Add Egg Wash: Whisk the remaining egg and brush it over the tops of the buns. Optionally, sprinkle sesame seeds on top for added texture and flavor.
Bake: Bake the buns in the preheated oven for 14-17 minutes, or until they are golden brown on top. Remove them from the oven and let cool for 5 minutes before slicing in half and serving.
