  • 1 teaspoon dry mustard
  • 2 pounds ground beef, preferably 85% lean
  • 1/3 cup ketchup
  • 2 tablespoons Dijon mustard

  • 1 teaspoon cayenne pepper hot sauce, such as Tabasco (optional)

Directions:

  1. Prepare the Oven and Ingredients:
    • Arrange a rack in the middle of the oven and preheat to 375ºF.
    • Peel and grate the onion using the large holes of a box grater into a large bowl (you should get about 3/4 cup of grated onion).
    • Strip the leaves from the thyme sprigs and finely chop to get 2 teaspoons. Add to the bowl.
  2. Mix the Meatloaf:
    • To the bowl with the grated onion and thyme, add the oats, milk, eggs, kosher salt, black pepper, and dry mustard. Stir to combine well.
    • Add the ground beef to the mixture. Using your hands, gently mix everything until evenly combined. Be careful not to overmix, as this can make the meatloaf tough.
    • Transfer the mixture to a 9×5-inch loaf pan, smoothing the top with a spatula.
  3. Bake the Meatloaf:
    • Bake the meatloaf in the preheated oven for 45 minutes.
  4. Prepare the Glaze:
    • While the meatloaf is baking, make the glaze. In a small bowl, combine the ketchup, Dijon mustard, light brown sugar, Worcestershire sauce, and hot sauce (if using). Stir until well mixed.
  5. Glaze and Finish Baking:
    • After 45 minutes, remove the meatloaf from the oven. Pour the glaze over the top, using a spatula to spread it evenly.
    • Return the meatloaf to the oven and bake until the glaze is slightly caramelized and the internal temperature of the meatloaf reaches at least 165ºF, about 10 to 25 minutes more.
  6. Cool and Serve:
    • Let the meatloaf cool in the pan for 15 minutes. If desired, pour off any excess grease into a small bowl.
    • Use a sturdy spatula to transfer the meatloaf from the pan to a clean cutting board. Slice and serve.

Instructions

Add 2 pounds lean ground beef and use your hands to gently mix everything until evenly combined. Transfer the mixture to a 9×5-inch loaf pan and smooth the top with a spatula.
Bake for 45 minutes. Meanwhile, make the glaze: Place 1/3 cup ketchup, 2 tablespoons Dijon mustard, 1 tablespoon packed light brown sugar, 2 teaspoons Worcestershire sauce, and 1 teaspoon hot sauce, if using, in a small bowl and stir to combine.
