Ingredients
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup sugar
Zest of 3 large oranges
3/4 cup buttermilk
1/2 cup oil
2 eggs
1 tablespoon fresh orange juice
1/2 teaspoon vanilla extract
1 cup fresh cranberries (chopped or halved)
Instructions
Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it well.
In a medium bowl, combine the flour, salt, baking powder, and sugar. Set aside.
In a large bowl, whisk together the orange zest, buttermilk, oil, eggs, fresh orange juice, and vanilla extract.
Slowly add the dry ingredients to the wet ingredients, gently folding the mixture together until almost combined.
Add the chopped cranberries and stir just until everything is incorporated. Avoid overmixing.
Pour the batter into the prepared loaf pan and bake for about 1 hour, or until a knife inserted in the center comes out clean.
