FOR THE MUFFINS:

1 1/2 cups all-purpose flour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 cup vegetable oil

2/3 cup granulated sugar

2 eggs

1/2 tsp vanilla extract

1 1/4 cup peeled and diced pears

FOR THE STREUSEL TOPPING (OPTIONAL):

3 TBSP granulated sugar

3 TBSP brown sugar

2 TBSP all-purpose flour

1/2 tsp ground cinnamon

24 TBSP vegetable oil


Instructions

Preheat oven to 350°F. Grease a muffin pan or line with cupcake liners.
In a medium mixing bowl, whisk together dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, combine vegetable oil and sugar. Mix on low speed.
Add eggs and vanilla extract, mixing to combine.
Stir in the diced pears.
Gradually add the dry ingredients, mixing just until incorporated.
Scoop batter into prepared muffin pan.
If using streusel, mix granulated sugar, brown sugar, flour, and cinnamon in a small bowl. Whisk to combine.
Add 2 TBSP vegetable oil, mixing with your fingers, adding more oil if needed until it resembles wet sand.
Sprinkle streusel mixture over the muffin tops.
Bake for 25-30 minutes, or until a toothpick comes out clean.
Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
