Easy Salmon Patties

In the realm of cozy, home-cooked meals, salmon patties hold a special place. They’re not just quick and easy to prepare, but also incredibly versatile and universally loved. Whether you’re seeking a weeknight dinner solution that’s both nutritious and satisfying, or you need a simple yet impressive dish for your next gathering, these salmon patties are the answer. Follow this uncomplicated recipe to create a meal that will leave everyone asking for seconds.

Ingredients:

  • 15 oz. canned salmon, large bones removed: The star of the show, providing a rich, savory flavor and a host of nutritional benefits.
  • 2 eggs: They act as a binder, holding all the ingredients together so your patties don’t fall apart during cooking.
  • ⅓ cup shredded Parmesan cheese: Adds a salty, umami flavor that perfectly complements the salmon.
  • ½ cup breadcrumbs: Helps to absorb moisture, giving the patties a firmer texture.
  • 1 small bell pepper, finely diced: Introduces a sweet, crunchy element to the mix.
  • 2 tbsp. mayonnaise + 2 tbsp. Dijon mustard: These condiments enhance the patties’ moisture and flavor.
  • 2 tbsp. chopped scallion: Adds a mild, oniony crunch that’s absolutely irresistible.
  • ½ tsp. sea salt or to taste: Seasoning is key to bringing out the natural flavors of the salmon.
  • 2 tbsp. avocado oil for frying: A healthier frying option that withstands high temperatures without smoking.

Directions:

  1. Prep the Salmon: Begin by placing the salmon in a medium mixing bowl. Use a fork to gently flake the fish, ensuring there are no large chunks. This step is crucial for achieving the perfect texture in your patties.
  2. Mix Ingredients: To the bowl, add the eggs, shredded Parmesan, breadcrumbs, diced bell pepper, mayonnaise, Dijon mustard, chopped scallion, and sea salt. Mix everything well until the mixture is homogeneous. This blend of ingredients promises a pattie that’s moist on the inside and crispy on the outside.
  3. Form Patties: Using a ½-cup as a measure, scoop the mixture and form small patties with your hands. If the mixture feels too wet, you can add a little more breadcrumbs to achieve the desired consistency.
  4. Cooking Options:
    • If frying: Heat the avocado oil in a large skillet over medium heat. You’ll want to use enough oil to generously cover the bottom of the skillet. Once hot, fry the patties for about 5 minutes on each side. They should be golden, crispy, and cooked through.
    • If baking: For a lighter option, simply drizzle some olive oil onto a large, non-stick cookie sheet. Arrange the salmon patties on the sheet and brush the tops with a bit more oil. Bake in a preheated oven at 425˚F for 15 minutes, then flip and bake for an additional 5-7 minutes until golden and crispy.

Whether you choose to fry or bake these salmon patties, they’re bound to become a go-to recipe in your kitchen. Serve them on a bed of fresh greens, as a sandwich filler, or alongside your favorite dipping sauce for a delightful meal. With such ease and versatility, it’s no wonder these salmon patties are a beloved classic. Enjoy crafting this simple yet delicious dish that’s sure to impress your taste buds and those of your loved ones.
