Ingredients:

  • 1 teaspoon kosher salt
  • 1 teaspoon seasoned salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 pound ground beef (80% fat / 20% lean)
  • 1 tablespoon canola oil
  • 4 slices sharp cheddar cheese (optional)
  • 4 split hamburger buns, toasted
  • Topping options: pickle slices, thinly sliced red onion, tomato slices, lettuce

Directions:

  1. Prepare the Seasoning:
    • In a small bowl, combine 1 teaspoon kosher salt, 1 teaspoon seasoned salt, 1 teaspoon black pepper, and 1/2 teaspoon garlic powder.
  2. Form the Beef Patties:
    • Divide 1 pound of ground beef into 4 portions and form into rough, loose balls. Avoid pressing them together too much to maintain a loose texture.
    • Place the beef balls on a baking sheet or large plate and sprinkle all over with the seasoning mixture.
  3. Heat the Skillet:
    • Heat a 10-inch or larger cast iron skillet over medium-high heat until very hot, about 3 minutes. Add 1 tablespoon canola oil.
  4. Cook the Patties:
    • Working in 2 batches if needed to avoid crowding the pan, add the beef balls to the skillet.
    • Flatten the balls with a flat spatula to form rough 4-inch wide patties that are about 1/2-inch thick.
    • Cook until the edges are brown and the beef no longer sticks to the skillet, 2 to 3 minutes.
  5. Flip and Add Cheese:
    • Flip the patties and place 1 slice of sharp cheddar cheese on top of each patty, if using.
    • Continue cooking until the cheese is fully melted and the burgers no longer stick to the pan, another 2 to 3 minutes.
  6. Assemble and Serve:
    • Serve the smash burgers immediately on toasted buns with your desired toppings, such as pickle slices, thinly sliced red onion, tomato slices, and lettuce.
