Ingredients:

For the Salmon Roll-Ups:

  • 8 oz. smoked salmon
  • ½ cup whipped cream cheese
  • 2 tablespoons green onion, thinly sliced
  • 2 teaspoons lemon zest
  • 1 small Persian cucumber, sliced into thin strips
  • ½ avocado, sliced into thin strips
  • Everything But The Bagel Seasoning (EBTB), for sprinkling

For the Citrus Soy Sauce (Optional):

  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon water
  • 1½ teaspoons mirin
  • 1 tablespoon green onion, sliced thin

Directions:

Prepare the Citrus Soy Sauce:

  1. Mix the Ingredients: In a small bowl, combine the soy sauce, lemon juice, water, mirin, and thinly sliced green onion. Stir well.
  2. Chill: Refrigerate the sauce while you prepare the salmon roll-ups, allowing the flavors to meld.

Make the Salmon Roll-Ups:

  1. Prepare the Cream Cheese Filling: In a small bowl, blend the whipped cream cheese with sliced green onion and lemon zest. Set aside.
  2. Prepare the Salmon Base: Lay out a large piece of plastic wrap on your countertop. Evenly sprinkle the plastic wrap with Everything But The Bagel Seasoning. Arrange the smoked salmon slices over the seasoning in a small rectangle, slightly overlapping the edges to form a solid layer.
  3. Add the Filling: Evenly spread the cream cheese mixture over the salmon. Along the center of the rectangle, place the thin strips of cucumber and avocado.
  4. Roll It Up: Using the plastic wrap as a guide, carefully roll the salmon over the fillings, tucking and rolling until completely enclosed. The plastic wrap helps keep everything tight and tidy.
  5. Chill for Slicing: Transfer the salmon roll to the freezer for about 5-10 minutes to firm up. This makes slicing much easier.
  6. Slice: Remove from the freezer and using a sharp knife, cut the roll into desired thickness.

Serving Suggestions:

  • Serve Immediately: Present the salmon roll-ups with the chilled citrus soy sauce for dipping.
  • Accompaniments: These roll-ups can also be served on crackers or crostini for added texture and flavor.
