Ingredients
For the Rice:
2 cups dry Calrose Sushi Rice
2 cups water
1/4 cup seasoned rice vinegar Marukan
Crab Mixture:
16 oz imitation crab, chopped into small pieces
10 cooked tempura shrimp, chopped (premade from Costco)
1/2 cup Japanese mayonnaise
2 oz cream cheese
1 Tbsp sriracha
3 Tbsp furikake
Toppings:
1/2 cup Spicy mayo
1–2 Tbsp Furikake
1/4 cup Unagi
Instructions
Prepare the Rice: Rinse the sushi rice in a fine-mesh sieve under cold water for about 1 minute. Place rinsed rice and water into a rice cooker and start cooking. Once cooked, spread onto a rimmed baking sheet, gently fold in the seasoned rice vinegar with a rice paddle, and let cool.
Make the Crab Mixture: Combine chopped imitation crab, tempura shrimp, Japanese mayonnaise, cream cheese, and sriracha in a bowl. Mix until well combined.
Assemble the Dish: Evenly press the cooled sushi rice into the baking sheet and sprinkle 3 Tbsp of furikake over it. Spread the crab mixture on top and broil for 4 minutes.
Garnish and Serve: After broiling, drizzle with spicy mayo, sprinkle additional furikake, and top with unagi. Optional garnishes include chopped cucumber and green onions.
