Ingredients
2 large zucchini
2 tablespoon olive oil – divided
½ cup cherry tomatoes
½ cup marinara sauce
⅓ cup mozzarella cheese – dairy-free if desired
2 tablespoon parsley – chopped
Instructions
1️⃣ Preheat your oven to 400°F (200°C). 🔥
2️⃣ Slice the zucchini into ¼ inch circles, place them on a baking sheet, and drizzle with 1 tablespoon olive oil. 🥒🫒
3️⃣ Bake the zucchini slices for 5 minutes to soften them up a bit. ⏳
4️⃣ While the zucchini is baking, heat the remaining 1 tablespoon olive oil in a skillet and sauté the cherry tomatoes until they are soft. 🍅🍳
5️⃣ Spoon about ½ tablespoon of marinara sauce over each zucchini slice, crumble the cheese of your choice on top, then add 1-2 sautéed tomatoes on each bite. Roast for another 15-20 minutes until the cheese is melted. 🍕🧀
6️⃣ Top with fresh chopped parsley and dig in! 🌿🍴
