2 large eggs
¼ cup (60g) sour cream
1 cup (240ml) buttermilk
2 cups (285g) all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup (240ml) club soda
3 tablespoons unsalted butter, melted
Instructions
In a medium bowl, whisk together the eggs, sourcream, and buttermilk.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Pour the wet ingredients into the flour mixture and mix until barely combined.
Stir in the club soda and melted butter. The batter should be lumpy.
Let the batter sit for 10 minutes. Meanwhile, heat the waffle iron.
Drop the appropriate amount of batter into the hot waffle iron. Cook the waffles until golden brown, about 5 minutes.
Transfer the cooked waffles onto a wire rack and repeat with the remaining batter.
