Description

The Egg Roll Stir-Fry Delight is a delectable, streamlined rendition of the classic egg roll, transformed into a stir-fry that lacks none of the original’s savory appeal. This dish is not only quick to prepare but also healthy, making it an ideal choice for a hectic weeknight dinner. The recipe provides all the flavors of traditional egg rolls without the fuss of wrapping and frying, serving up a satisfying meal in one bowl.

Ingredients

Scale
  • 1 pound lean ground beef (85/15)
  • 1 Tbsp olive oil
  • 1/2 tsp fine sea salt, or to taste
  • 1/4 tsp pepper, or to taste
  • 1/2 onion, finely diced
  • 1 carrot, julienned or coarsely grated
  • 3 garlic cloves, minced
  • 3 cups cabbage, thinly sliced
  • 1 tsp ground ginger
  • 1/4 cup low sodium soy sauce
  • 2 tsp sesame oil
  • 1/2 tsp granulated sugar
  • 1 Tbsp chopped green onion, optional for garnish
  • 1/4 tsp sesame seeds, optional for garnish

Instructions

  1. Cook the Ground Beef: Set a large skillet over medium/high heat and add the olive oil. Once hot, introduce the ground beef. Cook until it is browned and no longer pink (about 5 minutes), breaking the meat into smaller pieces with a spatula as it cooks. Season with salt and pepper during the browning process.
  2. Add Vegetables: Add the diced onion and carrots to the skillet. Sauté the mixture until the onion becomes tender, which usually takes about 5-7 minutes. Make sure to stir the contents occasionally to ensure even cooking.
  3. Include Garlic and Seasonings: Stir in the minced garlic to the beef and vegetables, and continue to cook for an additional 30 seconds, taking care to stir continuously to prevent the garlic from burning.
  4. Combine Remaining Ingredients: Add the thinly sliced cabbage along with the ground ginger, soy sauce, sesame oil, and granulated sugar. Continue to sauté for another 5-7 minutes, or until the cabbage reaches your desired level of tenderness, stirring occasionally.
  5. Garnish and Serve: Remove the skillet from heat. Serve the stir-fry in bowls, optionally garnished with chopped green onion and sesame seeds.
