Ingredients
2 tablespoons olive oil
1.5 lb large raw shrimp, peeled, deveined, tails off
½ teaspoon Italian seasoning
½ teaspoon red pepper flakes
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
5 cloves garlic, minced
¼ cup freshly squeezed lemon juice
½ cup chicken broth (low sodium preferred)
3 tablespoons salted butter
3 tablespoons capers
3 tablespoons lemon zest
½ cup fresh basil, chopped
Instructions
Cook Shrimp: Heat a large skillet over medium heat. Add olive oil, then arrange the shrimp in a single layer. Season with Italian seasoning, red pepper flakes, salt, and pepper. Cook for 3-4 minutes until the shrimp turn pink, flipping occasionally. Remove shrimp from the skillet and set aside.
Make Sauce: In the same skillet, combine the minced garlic, lemon juice, and chicken broth to deglaze the pan. Cook until the sauce has slightly reduced and the garlic is soft, about 2-3 minutes. Turn off the heat and whisk in the butter until fully melted and incorporated.
Assembly: Return the cooked shrimp to the skillet. Add 2 tablespoons of capers and gently stir over low heat until everything is well combined and heated through.
Serve: Garnish with the remaining capers, freshly chopped basil, and lemon zest. For an extra burst of freshness, drizzle with additional lemon juice just before serving.
