Flatbread:
2 cups prepared mashed potatoes (from 2 medium Russet potatoes)
1/4 cup melted butter
1 egg
1 cup rice flour
1/4 cup corn starch (or tapioca or potato starch)
2 tsp baking powder
1/2 tsp salt
Everything Topping:
2 tsp poppy seeds
2 tsp sesame seeds
2 tsp dried garlic or 1/2 tsp garlic powder
2 tsp dried onion
1 tsp dried basil
1/2 tsp salt


Instructions

Prepare the Mashed Potatoes: Cook and mash the potatoes, then set aside to cool. Alternatively, you can use 2 cups of prepared mashed potatoes.
Make the Dough: In a large mixing bowl, add the mashed potatoes. Stir in the melted butter and egg, mixing until smooth. Then, add the rice flour, corn starch, baking powder, and salt. Mix until a smooth dough forms. Wrap the dough ball in plastic wrap and refrigerate for 30 minutes.
Preheat the Oven: Preheat your oven to 450°F (230°C).
Prepare the Everything Topping: In a small bowl, mix together the poppy seeds, sesame seeds, dried garlic, dried onion, dried basil, and salt until well combined.
Shape the Flatbread: Cut the chilled dough into 8 pieces. Roll each piece into a ball and flatten with lightly floured fingers. Place the flattened dough pieces onto a parchment-lined baking sheet.
Add the Topping: Brush the flattened dough with melted butter and sprinkle generously with the everything topping mixture.
Bake: Bake the flatbreads for 15 minutes, or until they are golden brown. Remove from the oven and brush with melted butter once more before serving.
