Ingredients
1 C apple cider
½ C chicken broth
½ teaspoon minced garlic
1 C grated smoked gouda
1 C grated swiss cheese
1 C grated sharp cheddar cheese
1 Tbsp cornstarch
¼ C half & half, room temperature
¼ tsp coarse ground black pepper
Instructions
Turn on your crock pot or fondue pot to start heating.
Grate the smoked gouda, swiss, and sharp cheddar cheeses. Place in a mixing bowl, add black pepper, and toss to combine. Set aside.
In a medium saucepan over medium heat, bring the apple cider, chicken broth, and minced garlic to a simmer.
Slowly add a handful of the cheese mixture to the simmering broth and cider, stirring constantly until the cheese melts before adding more. Repeat until all the cheese is melted.
In a measuring cup, whisk together the cornstarch and half & half. Gradually pour this into the cheese mixture while stirring until the fondue becomes smooth and shiny.
Transfer the mixture to the heated crock pot or fondue pot, and serve warm with bread, apples, or vegetables for dipping.
