This Feta Grilled Cheese Sandwich with Spinach is not just a sandwich; it’s a feast for the senses. The creamy feta, with its tangy edge, pairs beautifully with the mild bitterness of spinach and the sweet chewiness of sun-dried tomatoes, while a drizzle of honey adds just the right touch of sweetness to balance the flavors.

Produce:
1 pinch Chili flakes
1 pinch Oregano
2 cups Spinach, leaves
6 pieces Sun-dried tomatoes
Condiments:
1 Honey (to drizzle)
Baking & Spices:
1 pinch Salt
Oils & Vinegars:
1/2 tbsp Olive oil
Bread & Baked Goods:
4 slices Bread
Dairy:
2 tbsp Butter
1/4 cup Cheddar cheese, shredded
1/2 cup Feta cheese, crumbled


Instructions

Heat a skillet over medium heat and add olive oil. Add spinach leaves, chili flakes, oregano, and a pinch of salt. Sauté until spinach is wilted, then remove from heat.
On one slice of bread, spread half of the butter. Place it butter-side down in the skillet over medium heat.
Layer on half of the cheddar cheese, all the sautéed spinach, sun-dried tomatoes, and feta cheese. Drizzle with honey for a touch of sweetness.
Top with another slice of bread and spread the remaining butter on the outside of the top slice.
Cook until the bottom slice is golden brown, then carefully flip the sandwich and cook until the other side is golden brown and the cheese is melted.
Repeat the process for the second sandwich.
