- 6 eggs
- 1 cup milk (dairy or nondairy)
- 1 cup oat flour (use gluten-free oat flour if necessary)
- 8–10 fresh figs
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- Dash of salt

Instructions
- Preheat your oven to 400 degrees Fahrenheit. During this time, place the unsalted butter in a large cast iron skillet and let it sit in the oven to melt and slightly brown.
- While the oven is heating, slice each fig lengthwise into 3-4 sections, then set these slices aside for later use.
- In a large mixing bowl, thoroughly whisk the eggs, milk, oat flour, vanilla extract, and a dash of salt until the mixture is smooth.
- When the oven reaches the set temperature and the butter is melted and slightly browned, carefully remove the skillet from the oven. Pour the batter directly into the hot skillet over the melted butter.
- Arrange the sliced figs evenly on top of the batter. Return the skillet to the oven and bake for 28 minutes, or until the edges start to turn a delicious golden brown.
