Description

Filipino Adobo Chicken is a beloved dish known for its rich, savory, and tangy flavors. Baked to perfection, the chicken thighs become tender and juicy while the sauce reduces into a glossy glaze that’s perfect for drizzling over rice.

6 chicken thighs, bone-in, skin-on
1/2 cup soy sauce
1/2 cup white vinegar
4 cloves garlic, crushed
1 tablespoon black peppercorns
4 bay leaves


Instructions

In a large bowl, mix the soy sauce, vinegar, garlic, peppercorns, and bay leaves. Add the chicken thighs and marinate for at least 4 hours in the refrigerator.
Preheat the oven to 375°F (190°C).
Place the chicken skin-side down in a large Dutch oven, pour in the marinade, and cover the pot. Bake for 30 minutes.
Uncover, flip the chicken thighs, and baste with the sauce. Continue baking uncovered for another 30 minutes until the chicken is browned and the sauce has reduced.
Serve with steamed rice and garnish with extra sauce.
