Description

The Firecracker Ground Chicken Bowls pack a punch with bold buffalo sauce, tangy apple cider vinegar, and a hint of sweetness from coconut sugar. The heat from the sauce pairs perfectly with tender ground chicken and crisp broccoli, making every bite both fiery and satisfying.


Ingredients

For the sauce:
1/2 cup buffalo sauce (use this for paleo, or this for AIP)
2 tbsp coconut aminos
3 tbsp coconut sugar
2 tsp apple cider vinegar
1 tsp ginger powder
2 tsp garlic powder
Salt and black pepper to taste (omit pepper for AIP)
For the bowls:
2 tbsp avocado oil
1 cup broccoli florets
Salt and pepper to taste
1 lb ground chicken
2 tbsp green onion, sliced
3 cups cauliflower rice, cooked (or steamed rice)


Instructions

Combine the ingredients for the firecracker sauce in a small bowl. Stir well and adjust seasoning to taste.
Heat avocado oil in a large pan over medium heat. Add the broccoli florets and sauté for 4-5 minutes or until lightly crisp. Season with salt and pepper to taste and set aside.
In the same pan, add the ground chicken and crumble as it cooks. Stir until fully cooked through, about 6-8 minutes.
Return the broccoli to the pan and pour in the firecracker sauce. Stir well until the chicken and broccoli are fully coated with the sauce.
Serve in bowls over cooked cauliflower rice or steamed rice, and garnish with green onion.
