FLAN COCO À LA BRÉSILIENNE

Ingredients

For the coconut base:

150g grated coconut 🥥
120g sweetened condensed milk 🥛
1 tsp vanilla extract 🌿
1 egg white 🥚
For the coconut cream:

400ml coconut milk 🥥
500ml milk 🥛
70g cornstarch 🌽
150g sweetened condensed milk 🥛
1 egg yolk 🥚
40g grated coconut 🥥
1 tsp vanilla extract 🌿


Instructions

1️⃣ Prepare the coconut base:

Preheat your oven to 180°C (350°F). 🔥
In a bowl, mix the grated coconut, sweetened condensed milk, vanilla extract, and egg white. 🥄
Pour half of this mixture into a buttered 18cm (7-inch) mold and press it down to form a base. Use the remaining mixture to cover the sides of the mold. 🥄
Bake for 20-30 minutes until the base is golden brown. 🍞
2️⃣ Prepare the coconut cream:

In a blender, combine the coconut milk, milk, cornstarch, sweetened condensed milk, egg yolk, grated coconut, and vanilla extract. Blend until smooth. 🍶
Pour this mixture into a saucepan and bring to a boil over medium heat, stirring constantly. Continue to cook for 3 more minutes after it starts boiling. 🍲
3️⃣ Assemble the flan:

Pour the hot coconut cream over the baked coconut base. Let it cool, then refrigerate for 3-5 hours or overnight until set. ❄️
Once set, carefully demold the flan, sprinkle with grated coconut, and serve. Enjoy!
