1 cup warm milk
2 ¼ tsp active dry yeast
1 tbsp brown sugar
6 tbsp salted butter, at room temperature
3 large eggs
4 cups all-purpose flour (plus extra if needed)
½ tsp kosher salt
½ tsp ground vanilla bean powder
Filling:
½ cup brown sugar
¼ cup granulated sugar
1 tbsp cinnamon
6 tbsp salted butter, at room temperature
Brown Butter Caramel Cream Cheese Icing:
4 tbsp salted butter, at room temperature
4 oz cream cheese, at room temperature
¼ cup caramel sauce
23 cups powdered sugar
2 tsp vanilla extract
Flaky sea salt (for garnish)


Instructions

Make the Dough:
In the bowl of a stand mixer fitted with a dough hook, combine the warm milk, active dry yeast, and brown sugar. Let it sit for 5-10 minutes until bubbly and frothy.
Add the butter, eggs, 3 ½ – 4 cups flour, vanilla bean powder, and salt. Mix on low with the dough hook until the flour is fully incorporated, about 4-5 minutes. If the dough is sticky, add an extra ¼ cup flour as needed until the dough is smooth and soft to touch.
Cover the bowl with plastic wrap and let the dough rise at room temperature for 1 hour, or until doubled in size.
Prepare the Filling: 4. While the dough is rising, mix the filling by combining the brown sugar, granulated sugar, and cinnamon in a small bowl. Butter a 9×13 inch baking dish and set aside.
Roll and Shape the Dough: 5. Punch the risen dough down and transfer it to a lightly floured surface. Roll it into a large rectangle, about 12 x 18 inches. Spread the room temperature butter evenly over the dough, and sprinkle the cinnamon sugar mixture on top. 6. Starting from the long edge closest to you, tightly roll the dough into a log. Once rolled, pinch the edges to seal the roll. Use a sharp knife to cut the log into 12-15 rolls. 7. Arrange the rolls in the prepared baking dish. Cover with plastic wrap and let the rolls rise for another 15-20 minutes.
Bake: 8. Preheat the oven to 350°F (175°C). Bake the cinnamon rolls for 25-30 minutes, or until they turn golden brown on top.
Make the Brown Butter Caramel Cream Cheese Icing: 9. While the rolls are baking, prepare the icing. In a small pot, melt the butter over medium heat and cook until it turns a light golden brown and develops a nutty aroma (about 2-3 minutes). Remove from heat and set aside. 10. In a large bowl, beat the cream cheese until light and fluffy. Add the brown butter, powdered sugar, caramel sauce, vanilla extract, and a pinch of flaky sea salt. Beat until the icing is smooth and creamy.
Serve: 11. Once the cinnamon rolls have finished baking, spread the caramel cream cheese icing over the warm rolls. Garnish with an extra pinch of flaky sea salt if desired, and serve immediately. Enjoy!
