French Onion Skillet Gnocchi

There’s something deeply satisfying about the combination of caramelized onions, melted cheese, and the comforting chew of gnocchi. Today, I’m thrilled to share a recipe that marries all these elements into one skillet wonder—French Onion Skillet Gnocchi. This dish is a cozy meal perfect for chilly evenings, combining the heartiness of a French onion soup with the delightful texture of gnocchi.

Ingredients

  • 2 pounds yellow onions, thinly sliced (about 2 large or 4 medium)
  • 1 small bunch fresh thyme, divided
  • 2 tablespoons olive oil, divided
  • 2 (16- to 18-ounce) packages potato gnocchi (fresh, shelf-stable, or frozen, do not thaw)
  • 2 tablespoons unsalted butter
  • 1 teaspoon kosher salt, plus more as needed
  • 1/2 teaspoon freshly ground black pepper, plus more for serving
  • 6 ounces Gruyère cheese, grated
  • 1/4 cup dry white wine
  • 1 teaspoon balsamic or sherry vinegar

Directions

  1. Prepare Your Broiler: Begin by preheating your broiler and positioning a rack 6 to 8 inches below the element. This setup will be crucial for achieving that perfectly bubbly and golden cheese topping.
  2. Brown the Gnocchi: In a 12-inch cast iron skillet, heat 1 tablespoon of olive oil over medium heat. Add one package of gnocchi and cook until golden-brown on the bottom, about 3 to 5 minutes. Remove the gnocchi to a baking sheet and repeat with the remaining oil and gnocchi.
  3. Caramelize the Onions: Using the same skillet, melt the butter. Add onions, half the thyme, salt, and pepper. Cook, stirring occasionally, until the onions are caramelized, about 28 to 30 minutes. Pour in the wine to deglaze the pan, scraping up any browned bits, and cook until the wine has evaporated. Stir in the vinegar.
  4. Combine and Broil: Return the gnocchi to the skillet, stir well to mix, and smooth out the top. Sprinkle evenly with the grated Gruyère cheese. Broil the skillet until the cheese is bubbly and browned, about 4 to 6 minutes.
  5. Garnish and Serve: Finish the dish by garnishing with the remaining thyme and a few twists of black pepper. Serve hot directly from the skillet.
