2 pounds yello
w onions (about 2 large or 4 medium), halved and thinly sliced
1 small bunch fresh thyme, divided
2 tablespoons olive oil, divided
2 (16- to 18-ounce) packages fresh, shelf-stable, or frozen potato gnocchi (do not thaw)
2 tablespoons unsalted butter
1 teaspoon kosher salt, plus more as needed
1/2 teaspoon freshly ground black pepper, plus more for serving
6 ounces Gruyère cheese, grated
1/4 cup dry white wine
1 teaspoon balsamic or sherry vinegar
Instructions
Heat 1 tablespoon olive oil in a 12-inch cast iron or other broiler-safe skillet over medium heat. Add gnocchi in a single layer, cover, and cook until golden-brown, 3-5 minutes. Transfer to a baking sheet. Repeat with remaining gnocchi.
Melt butter in the skillet, add onions, half the thyme leaves, salt, and pepper. Cook until onions are caramelized, about 30 minutes. Preheat broiler.
Deglaze skillet with white wine, add vinegar, and reduce heat.
Return gnocchi to skillet, mix well. Top with Gruyère cheese and broil until cheese is bubbly and browned, 4-6 minutes.
Garnish with remaining thyme and black pepper.
