1 1/3 cup flour
1 1/4 tsp baking powder
1/4 tsp salt
1 stick of softened butter
1 cup sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream or Greek yogurt (low fat)
2 cups rough chopped strawberries
Sugar for finishing


Instructions

Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, whip butter and sugar together until light and fluffy.
Add eggs one at a time, beating well after each addition.
Mix in vanilla extract.
Gradually add the flour mixture alternately with the sour cream, starting and ending with the flour.
Fold in chopped strawberries with a spatula.
Pour the batter into the prepared pan and sprinkle the top with sugar.
Bake for 35-40 minutes or until a cake tester comes out clean.
Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
