  • 1/4 cup unsalted butter, cold
  • 1/4 cup light brown sugar
  • 1/4 cup all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Spray a regular-sized muffin tin with non-stick cooking spray and set aside.
  2. In a large bowl, whisk together the milk, sugar, eggs, vanilla, and cinnamon until well combined.
  3. Gently fold the cubed bread into the egg mixture, ensuring each piece is evenly coated.
  4. Distribute the bread mixture evenly among the 12 muffin cups, filling each about 1/3 full.
  5. To prepare the streusel topping, use a food processor or a pastry blender to mix the cold butter, brown sugar, flour, cinnamon, and a pinch of salt until the mixture resembles coarse crumbs.
  6. Sprinkle the streusel topping generously over each muffin cup.
  7. Bake in the preheated oven for 25-30 minutes or until the muffins are golden brown and puffed up.
  8. Allow the muffins to cool in the pan for 5 minutes before removing them. Serve warm with optional powdered sugar and maple syrup.
