- 1/4 cup unsalted butter, cold
- 1/4 cup light brown sugar
- 1/4 cup all-purpose flour
- 1/8 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Spray a regular-sized muffin tin with non-stick cooking spray and set aside.
- In a large bowl, whisk together the milk, sugar, eggs, vanilla, and cinnamon until well combined.
- Gently fold the cubed bread into the egg mixture, ensuring each piece is evenly coated.
- Distribute the bread mixture evenly among the 12 muffin cups, filling each about 1/3 full.
- To prepare the streusel topping, use a food processor or a pastry blender to mix the cold butter, brown sugar, flour, cinnamon, and a pinch of salt until the mixture resembles coarse crumbs.
- Sprinkle the streusel topping generously over each muffin cup.
- Bake in the preheated oven for 25-30 minutes or until the muffins are golden brown and puffed up.
