  • 1 teaspoon salt
  • ½ cup chilled shortening
  • ½ cup cold water
  • 2 apples (peeled, cored, and diced)
  • ¼ cup white sugar (or to taste)
  • ⅛ teaspoon ground cinnamon (or to taste)
  • 1 quart oil for frying, or as needed

Instructions

  1. Prepare the pastry In a large bowl, sift together the flour and salt. Using two knives or a pastry blender, cut in the chilled shortening until the mixture resembles coarse crumbs. Gradually add the cold water, tossing with a fork, until the dough comes together in a ball. Wrap in plastic and refrigerate for 30 minutes.
  2. Make the filling Combine the diced apples, sugar, and cinnamon in a saucepan. Cook covered over low heat until the apples are soft. Mash the mixture to form a thick applesauce and let cool.
  3. Assemble the pies Roll out the dough on a floured surface to 1/8 inch thick. Cut out eight 4-inch rounds. Place a tablespoon of apple filling on each round, moisten the edges with water, fold in half, and press the edges with a fork to seal.
  4. Fry the pies Heat oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C). Fry the pies in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
