3 ripe but still firm bananas
¼ cup natural smooth peanut butter
10 oz (280 g) dark chocolate, chopped (or chocolate chips)
2 teaspoons coconut oil (optional, but recommended for smoother chocolate)
Instructions
Cut bananas into slices (about ¼ inch or 0.7 cm each). Set aside half of the slices and arrange the other half on a baking sheet lined with parchment paper.
Heat peanut butter in the microwave on low/medium for about 30 seconds to 1 minute, stirring in between, until smooth and spreadable.
Spoon about one heaped ¼ teaspoon (up to ½ teaspoon for larger slices) of peanut butter on each banana slice on the baking sheet. Top with the other half of the banana slices. Freeze for two hours.
For the chocolate coating, place the chopped chocolate and coconut oil in a microwave-safe bowl. Microwave in 30-second bursts on low/medium, stirring in between, until the chocolate is fully melted and glossy.
Prepare a second baking sheet with parchment paper. Dip each frozen banana sandwich into the melted chocolate, using two forks to roll and completely coat them.
Place the chocolate-covered bites onto the baking sheet and return to the freezer until set. Store in a container in the freezer.
